Buy with fresh shoots, avoid wilted leaves. Keeps for several weeks in a cool, dark place.

Pickled. Sliced finely in salads and slaws. With salmon. With feta.
Health benefits
The pigment Betacyanin (which makes beetroot its distinctive colour) which some studies have indicated provide anti-cancer properties.
